Ingredients

  • 300 grams Cracker Crumbs
  • 140 grams butter Melted
  • 40 grams Sugar
  • 600 grams Cream Cheese
  • 200 grams Sugar
  • 25 grams Flour
  • 170 grams Sour Cream
  • 90 ml Lemon juice
  • 2 tbsp Lemon Zest
  • 3 large eggs
  • 2 Egg Yolks
  • 2 cups Fresh for You blueberries

Method

  1. For Crust - Preheat over at 170 degrees, line a 9inch baking tray with grease prove paper. Mix the crust ingredients in a small bowl and press the mixture into the bottom and up the sides of the try. Bake for 10 minutes then set aside to cool.
  2. For Cheesecake - Reduce oven to 150 degrees. In a large bowl mix together the cream cheese, sugar and flour until combined and smooth. Add the sour cream, lemon juice and lemon zest, then mix until fully combined. Now, add the eggs one at a time and slowly mix until combined. After this, add the egg yolks until combined. Finally, mix in the blueberries to the batter.
  3. Pour batter evenly onto the crust, bake for 1 hour and 15 minutes. Once the time is up, turn off the over; leave the cheesecake in the oven for a further 30 minutes. Take out of the oven and place in fridge until completely cooled. Enjoy!

Ingredients

  • 1 Centra Peppers Twinpack Chopped into Large Pieces
  • 2 tub cherry tomatoes
  • 3 Courgettes Chopped into medium-thick pieces
  • 1 Lemon Zest
  • 1 Pinch salt
  • 1 Pack Wooden Skewers
  • 0.24 tbsp Cavenne Pepper
  • 2 Centra Avocado Chopped
  • 3 Centra Lemon Juice
  • 1 Centra Spring Onion Finely Chopped
  • 0.5 tub Coriander Chopped
  • 2 Clove garlic Minced

Method

  1. Soak wooden skewers in water for at least 20 mins. before grilling.
  2. Chop courgette and pepper - keep the pieces about the same size so they cook uniformly.
  3. Choose the best cherry tomatoes.
  4. Toss all the veggies in a bowl with a little olive oil, seasoning salt and lemon zest.
  5. Skewer the veggies in whatever order you would like.
  6. Make sure to keep enough room at the end of the skewer to turn while cooking.
  7. Turn on your BBQ grill to medium heat.
  8. Grill the kebabs - watch them to avoid overcooking.
  9. Avocado Sauce Instructions In a food processor, blend together chopped avocados, minced garlic and shallot, lemon juice, chopped cilantro and cayenne until smooth and creamy
  10. Add salt, pepper and cayenne to taste.
  11. If mixture is too thick, you can add more juice or a little water to thin it out a bit
  12. Mix and serve with your yummy kebabs!

Ingredients

  • 350 g Broccoli chopped into florets
  • 250 ml chicken stock
  • 2 tbsp Virgin Olive Oil
  • 1 tsp Lemon juice
  • 1 tbsp Lemon Zest
  • 1 onion diced
  • 4 tbsp walnuts roasted

Method

  1. Heat your oil in a pan and add your onions, for best results sauté for about 6/7 minutes.
  2. Add the broccoli and stir until well coated.
  3. Place the pan in the oven and grill for about 10 minutes, only stirring once.
  4. Remove, cover and let it settle for a couple of minutes.
  5. Add your onion, broccoli mixture and lemon juice to the chicken stock.
  6. Puree in a blender until smooth.
  7. Add the soup to your bowls and top off with the lemon zest and walnuts.

Ingredients

  • 125 g Broccoli
  • 1 Centra Cod Fillet
  • 2 tbsp Centra Olive Oil
  • 25 g Greek Yoghurt
  • 1 tbsp Lemon Zest
  • 1 handful Parsley
  • 240 g Potatoes Peeled and Chopped

Method

  1. Preheat oven to 200°c.
  2. For chips: Part boil your potatoes by dropping the chips into a saucepan of boiling water as soon as the water come back to the boil drain the potatoes and allow them to steam. Toss them in 2 tbsp of oil season with salt and pepper and place on baking tray. Cook in the oven for 30-40 mins until golden brown and crispy.
  3. For fish: Rub fish with 1 tbsp of coconut oil, lemon juice and season with salt and pepper and place on a lined baking tray. Bake in the oven for 8-10 mins. In a small bowl mix together some parsley and lemon zest after 10 mins sprinkle this mix over the cod and cook for a further 3-4 mins.
  4. To serve: Mix together the yoghurt and some parsley season with salt and pepper for a healthy tartar sauce. Serve fish and chips with tartar sauce and greens of your choice.

Ingredients

  • 4 tbsp Almond Butter
  • 1 Banana
  • 50 g butter
  • 3 tbsp Flax Seeds
  • 3 tbsp honey
  • 1 Sprinkle Lemon Zest
  • 1 Handful Mixed Nuts
  • 2 Tub Gluten Free Porridge Oats

Method

  1. Pre heat oven at 160oC.
  2. Melt butter, nut butter and honey in large saucepan. Mash bananas and add to saucepan. Once mixture is melted take off heat. Add oats, seeds, nuts, lemon & orange zest and mix together.
  3. Place baking paper into baking tin and grease with coconut oil. Place mixture into tin and spread evenly, 1 inch thick.
  4. Sprinkle seeds and drizzle honey over mixture to finish.
  5. Place in oven for 30 minutes.
  6. Take out to cool and then cut into bars. Enjoy!
