Ingredients
- 1 tbsp olive oil
- 1 onion chopped finely
- 250 grams Beef Mince
- 1 tsp hot smoked paprika
- 1 tsp ground cumin
- 1/2 tsp Chilli Powder
- 200 grams Black Beans drained
- 200 grams tortilla chips lightly salted
- 150 grams cheddar grated
- 100 grams cherry tomatoes quartered
- salt and pepper to season
- 4 Spring onions lightly chopped
- Coriander optional
- Chopped Chilli optional
- lime wedges
- Sour Cream
Method
Preheat the oven to 200C/180C Fan/Gas 6. Heat the oil in a frying pan over a medium heat, add the onion and cook for 3–5 minutes until soft and translucent.
Increase the heat and add the beef, paprika, cumin and chilli powder. Cook for 5-10 minutes, stirring occasionally, until the beef is browned.
Reduce the heat to medium and add the black beans, stirring gently, until the beans are heated through. Season with salt and pepper.
Line the base of a 1.5 litre/2¾ pint ovenproof dish or baking tray with a single layer of tortilla chips, then top with half of the beef mixture, then half the cheddar and half the cherry tomatoes. Add a second layer of tortilla chips, then top with the remaining beef and cheese. Transfer to the oven and cook for 8–10 mins, until the cheese has melted.
Remove the nachos from the oven and top with the remaining cherry tomatoes, spring onions, coriander and chilli, if using. Serve hot with the soured cream and lime wedges.

Ingredients
- 450 grams minced beef
- 1 medium onion finely chopped
- 1 teaspoon plain flour
- 1 teaspoon Oregano
- 1 tin Red Kidney beans
- 150 millilitres beef stock
- 1 Green Pepper diced
- 1/2 teaspoon Garlic Granules
- 2 teaspoons Mild Chilli Powder
- 1 tablespoon tomato puree
- 1 tin Corn
- 4 Wraps
Method
Fry the minced beef and onion until browned. Add the flour and cook for 1 minute, stirring.
Blend in the stock, seasonings, tinned tomatoes and tomato purée. Add the green pepper, kidney beans, corn and bring to the boil, stirring. Simmer, uncovered, for 15-20 minutes or until almost all the liquid has evaporated. Stir occasionally.
Divide the mince mixture between the wraps, top with lettuce and tomato and finish with a little soured cream, mayonnaise or grated cheese.

Ingredients
- 1 Egg organic
- 0.5 Avocado cubed
- 2 Spring Onion Finely chopped
- 1 Tomato Peeled and chopped into cubes
- 1 Gluten free tortilla wrap
- 1 sprig Coriander roughly chopped
- 1 clove garlic finely chopped
- 0.5 onion Finely chopped
- 1 red pepper deseeded and chopped into small cubes
- 1 pinch salt
Method
Heat a tbsp of oil in a shallow pan and add the garlic and onion.
Sauté until golden and add the chopped tomato and red pepper
Add some salt and pepper.
Let it simmer on medium heat until the pepper has softened and it looks like tomato sauce.
Sprinkle the chopped spring onions on top.
In another pan with oil, fry two eggs (salt to taste).
Place the tortilla on a plate and arrange the avocado strips and the slice of lime on the side.
Spoon a few tablespoons of the tomato sauce on the tortilla
Arrange the eggs on top of the sauce.

Ingredients
- 4 Handful Baby Spinach
- 1 Pinch Black Pepper
- 3 tbsp olive oil
- 3 Tomato Chopped
- 1 tbsp Chilli Powder
- 1 Courgette Chopped
- 2 clove garlic Minced
- 1 tsp ground cumin
- 1 onion Diced
- 0.5 tsp Paprika
- 1 Jalapeno Seeded and Diced
- 1 pinch salt
- 450 g Turkey Mince Can be substituted for beef mince
Method
In a large saucepan heat the oil over medium heat.
Add the onion and jalapeño, and cook until soft.
Stir in the garlic and courgette
Cook for a minute and add the seasonings.
Stir and add the turkey mince to the pot. Cook until no longer pink in the center.
Add the spinach and tomatoes, and season with salt and pepper.
Simmer until vegetables are soft and chili is thickened, 30-40 minutes. You can simmer for several hours to improve flavor; simply add water or broth to the pan.
